Argentinian Beef Empanadas

Like all dumplings these are a labor of love! This took a while but the end product?! Flaky, light, and delish!!! I will be making these again. They freeze/reheat well too! I used the tomato sauce can with both ends cut off as my cookie cutter.

Argentinian Beef Empanadas

Makes approximately 16 5 inch empanadas

For the dough:
4 1/2 cups of flour
3 teaspoons of salt
2 stick of cold unsalted butter, diced
2 large egg
2/3 cup of ice water
2 tablespoon of distilled white vinegar

For the filling:
1 pound of lean ground beef
2 tablespoon of smoked paprika
2 tablespoon of ground cumin
1 red bell pepper, seeded and diced
1 large onion, finely chopped (or 6 tbsp dried onion minced)
4 tablespoon of capers
olive oil
2 hard-boiled egg, roughly chopped
1 cup of chopped, canned tomatoes (1 6oz can tomato paste)
salt and pepper, to taste

1 egg, gently beaten with a fork (for the egg wash)

1. Combine Butter, Salt, and Flour in the food processor until reaching a sandy texture.
2. In a separate small bowl, beat the egg, water and vinegar together with a fork. Pulse into the dry mix until just combined.
3. Place it on a lightly floured surface and use a light hand to knead it gently a few times before forming it into a flattened ball. Wrap the dough in plastic wrap and refrigerate for an hour.
4. To make the filling, heat approximately olive oil in a large skillet over medium-high heat. Add the onion and cook until it begins to soften. Add the pepper and continue cooking. Next, add the diced tomatoes with their juices and let cook for a few minutes.
5. Add the beef, use the spoon to crush it up in the frying pan. Stir in the spices and capers. Season with salt and pepper, to taste. Cook until the beef has browned. Stir, occasionally, so that the meat cooks evenly. Stir in the hard boiled egg and let it cool.
6. Preheat your oven to 425 degrees F. Remove the dough from the refrigerator and roll it out until it is about 1/4 inch thick. Cut out roughly 4 inch round circles in the dough then use your fingers to spread it to about a 5 or 6 inch circle. Place 3 heaping tablespoons of filling in the center and fold the circle into a half moon. Pinch and fold the edges to seal them and place onto a prepared baking sheet. Continue to do this with the remaining dough and filling.
7. Once you’ve formed all of your empanadas, brush them with the egg wash. Bake the empanadas for approximately 25 minutes (until golden brown). You can freeze formed empanadas in a freezer bag and also refrigerate uneaten empanadas.

Stacked Roasted Vegetable Enchiladas

This was incredible!! It did take a bit longer then expected because roasting the veggies takes a while. But this would be awesome for veggies that are starting to turn or if you were hanging out one day with a bit of the extra time. I would probably roast the veggies one day and then assemble/cook the next day.

Picture didn't come out so well because I didn't wait for it to slightly cool before cutting :)

Stacked Roasted Vegetable Enchiladas
Adapted from Two Peas and Their Pod
Serves 5-6

Ingredients:
1 large red pepper, chopped, seeds removed
1 medium zucchini, chopped
1 medium yellow squash, chopped
1 large onion, chopped
1 cup corn
1 tablespoon olive oil
Salt and pepper
1 can black beans, rinsed and drained
1 teaspoon ground cumin
1 teaspoon chili powder
2 garlic cloves, minced
1 jalapeño, minced (optional)
1/2 cup chopped fresh cilantro
Salt and pepper, to taste
2 cups red enchilada sauce (canned el paso)
9-10 small corn tortillas
2 cups shredded Monterey Jack cheese (Mexican cheese)

Directions:
1. Preheat the oven to 400 degrees F. Place red pepper, zucchini, yellow squash, and onion on a large baking sheet. Drizzle with olive oil and toss until vegetables are coated. Season with salt and pepper. Roast vegetables for 30-40 minutes, or until tender, stirring occasionally. Remove vegetables from oven and let cool to room temperature. Reduce oven temperature to 350 degrees F.

2. Grease an 8x8 square baking pan and set aside. In a medium bowl, combine roasted vegetables, black beans, cumin, chili powder, garlic, jalapeño, and cilantro. Stir and season with salt and pepper.

3. Spread 1/4 cup of enchilada sauce into the bottom of the baking pan. Add a layer of tortillas, to completely cover the bottom of the pan. You might have to cut the tortillas to make them fit. Top with 1/3 of the vegetable/bean mixture and 1/3 of the cheese. Make a second layer of tortilla, enchilada sauce, vegetables/beans, and cheese. Top with with a layer of tortillas, enchilada sauce, vegetables/beans, and cheese. Spray a sheet of aluminum foil with cooking spray and cover the pan.

4. Bake enchiladas for 20 minutes. Remove the foil and bake for another 10 minutes, or until cheese is melted and the enchiladas are bubbling. Remove enchiladas from the oven and let cool for 10 minutes. Cut into squares and serve warm.

Two Step Slow Cooked French Dip with Au Jus

This was so easy! I also used my bread maker so we would have some fresh bread! This is a meal that A will often get at fancy steak places so I figured I'd try making it at home. I also want to use my slow cooker for more then pulled pork and beef stew.

I used chuck roast which can also be used in beef stew and it comes in a family pack from Wegman's. Other sites recommend using Sirloin because it is less greasy.

These can be served as sliders, on hoagie rolls, or on french bread. I used my bread maker to serve it with fresh bread!

2 Step Slow Cooked French Dip with Au Jus
adapted from All Recipes

3 lbs beef - chuck roast
1 can beef broth
1/2 bottle of dark beer
1 packet onion soup mix
1 pinch rosemary and thyme
1 tsp oregano
1 tsp Worcestershire sauce
1 tsp browning sauce
1 onion, sliced
  1. Combine all ingredients in slow cooker and then set for 7 hours on low. 
  2. Slice beef and then put back into the juice until ready to serve on crusty bread.

Chickpea Curry

Quick and easy meatless meal for you!

Chickpea Curry
Adapted from The Pioneer Woman
Serves 3

2 cups Rice
2 Tablespoons Vegetable Oil
1 whole Large Onion, Diced Fine
Salt And Pepper, to taste
2 teaspoons Curry Powder, Any Variety
2 cloves Garlic, Minced
1 cup Vegetable Stock
2 cans Chickpeas, Drained And Rinsed
1 can (13.5 Ounce) Coconut Milk
2 cups shelled edamame
1 Tablespoon Honey, More To Taste
1 Tablespoon Sriracha Or Hot Sauce (more To Taste)
Lime Wedges, For Serving (optional)
Cilantro Leaves, For Garnish

Cook rice according to the package instructions.

Heat the oil in a medium skillet over medium-low heat.
Add the onions, season with salt and pepper and cook for a few minutes, until the onions are soft and starting to turn golden. 
Sprinkle in the curry powder and garlic and stir, cooking for another minute or so. 
Pour in the vegetable stock and stir to scrape up all the brown bits in the pan. 
Add the edamame, coconut milk, honey and a squirt of sriracha. 
Bring to a boil, add the chickpeas, reduce the heat, and simmer for 10 minutes. 
Taste and adjust the seasoning, adding more salt, honey, or Sriracha (or lime juice, if using.)
Serve the curry over the rice. Garnish with the cilantro.

Stove Top Beef Stew

Brrrr it was cold today! I really was craving some beef stew! In our house the beef stew is very basic and heavy on the meat, potatoes, and carrots.

I had planned on making it in the slow cooker but errands (including the grocery store where I was getting dinner ingredients) took longer than expected. So I cobbled together several recipes to make some beef stew on the stove!

I wish I had grabbed some bread for this because then the meal would have been perfect!

Do I prefer my stove top beef stew or my slow cooker beef stew? The stove top beef stew was very rich because it had added butter and the potatoes/carrots were on the crunchier side - but that could have been because I was rushing to get dinner on the table! The easier version is easily the slow cooker but if you have the time then making it on the stove is a great option!

Stove Top Beef Stew

serves 6-8

Olive oil for searing
1/2 cup flour
2-3 lbs beef chuck, cut into 2-inch cubes
2 tbsp unsalted butter
2 small onions, cut into sixths (or blitzed in the food processor)
3 tsp garlic powder
1 can tomato sauce
2 cups cold water
2 cups chicken or beef broth, homemade or low-sodium canned
2 tsp thyme
2 bay leaves
1 tbsp red wine vinegar
1 tsp Worcestershire Sauce
2 tbsp balsamic vinegar
2 lbs medium red potatoes, quartered
4 medium carrots, cut into 2-inch pieces
1 bag frozen peas
salt & pepper

Heat a large Dutch oven with a tight-fitting lid over medium-high heat. Pour in enough oil to fill the pan about 1/4-inch deep. Spread flour out on a plate. Season half the beef generously with salt and pepper, then dredge in the flour. Shake off the excess flour, and add to the pan. Saute the meat, uncovered, stirring only occasionally, until well-browned, about 8 minutes. Using a slotted wooden spoon, transfer the beef to a plate. Repeat with the remaining beef.

In the same pot with the beef grease and such, add the onion and garlic. Cook, stirring, until lightly browned, about 5 minutes. Add the tomato sauce and cook, stirring, until lightly browned, about 1 minute more. Return the beef to the pot and add the red wine vinegar, Worcestershire sauce, balsamic vinegar, water and broth, and bring to a boil. Cover and set to low. Stew the meat until tender, about 1 1/2 hours. I stirred mine about every 15 minutes to keep it from sticking but I also struggle with the temperature of my stove.

Add the potatoes and carrots and bring back to a simmer. Stew, uncovered, on top of the stove, stirring occasionally, until the liquid has thickened and the beef and vegetables are tender, about 30 minutes to 1 hour.  Season with salt and pepper to taste. Divide among bowls and serve immediately.

Copy Cat Chex Mix

I love salty savory snacks and chex mix always hits the spot!! But... I don't want all the funky ingredients and lets be real, I pick around the stuff I want to eat. So here is a recipe that you can make with ONLY the tasty bits you want to eat! 

To sum it up, 16(ish) cups of stuff (cereals, pretzels, chips, cheerios, cheese its, bagel crisps, nuts, etc) and then coat it all in the seasoned butter mixture. Bake for 1 hour and stir every 15 minutes!

The only changes I'd make next time? I'd add a little more seasoning and make sure you mix it all up well so the things are coated nicely!! I've updated the amounts below! Enjoy!!

Copy Cat Chex Mix

5 cups corn chex
4 cups wheat chex
2 cups pretzels
1 cup honey-nut cheerios
2 cups cheese its
1 cup almonds
1 1/2 cups peanuts

¾ cup butter, melted
5 tablespoons Worcestershire sauce
1 1/2 tablespoon seasoned salt
2 teaspoons garlic powder
2 teaspoon onion powder
1/4 - 1/2 teaspoon cayenne pepper (optional, a little goes a long way!)

1. Preheat oven  275F
2. In a large roasting pan, stir together the cereals, pretzels and nuts.
3. In a small bowl, whisk together the melted butter, Worcestershire sauce, seasoned salt, garlic powder, onion powder and cayenne pepper. Drizzle evenly over the cereal mixture and, using clean hands, toss to combine, making sure that the mixture is evenly moistened.
4. Bake for 1 hour, stirring every 15 minutes. Once cool, store in an airtight container at room temperature for up to 2 weeks.

Hearty Slow Cooker Chili

I adapted this recipe from many different recipes available online and based off of the food in my kitchen. I really didn't want to have to go to the grocery store!

I used a combination of ground pork and ground turkey, roughly 2 -2.5 pounds and tomato sauce for tomato puree. I also added in some tomato sauce that was left over from dinner the other night. I actually keep a small container of the Chili Seasoning pre-mixed which is handy for assembling this meal!

I browned the meat and combined everything in the slow cooker the night before and stored it, covered, in the fridge. When I woke up I popped the insert into the cooker and set it on low. Volia! Dinner is served!

Serve with my Quick Rise Bread or with tortilla chips!

Hearty Slow Cooker Chili
serves 4-6

2 pounds ground beef (or pork or turkey or combination)
3/4 cup diced onion
3/4 cup diced celery
3/4 cup diced green bell pepper (optional)
2 teaspoons garlic powder
2 teaspoon Italian seasoning
2 (10.75 ounce) cans tomato puree (or sauce)
2 (15 ounce) can kidney beans, drained
1-2 tablespoons Chili Seasoning

  1. Place the meat in a skillet over medium heat, and cook until evenly brown. Drain grease.
  2. In the slow cooker combine the meat, onion, celery, green bell pepper, garlic, tomato puree, and kidney beans.
  3. Add 1 tablespoon of chili seasoning, stir, cover and cook on low for 8 hours. 
  4. After a while (when you get home from work?) taste it and see if you want it spicier, if so add more chili seasoning.

Thai Chicken Coconut Curry

I suffered an impulse buy a while back and purchased this spice bottle. Generally I don't buy the premixed spices because there is a lot of sodium!

However, the bottle wasn't super expensive and the ingredients would be a pain to gather separately. The ingredient list also did NOT include, "natural spices" or "natural flavor" - whatever that might mean. It also contains 88 mg of sodium per 1/4 tsp.

The ingredient list: salt, garlic, soy bean, coriander, chili, onion, lemon grass, celery seed, carrot, chives, turmeric, citric acid, black pepper, mustard powder, cumin, fenugreek, chickpea, ginger, cardamon.

Note: This is not spicy at all and we added some red pepper flakes.

Thai Chicken Coconut Curry
Adapted from The Gourmet Collection Thai Style Green Curry bottle
serves 3

Ingredients
1 large onion, diced
2 tbsp Thai green curry spice blend
1 pound chicken (2 large chicken breasts)
1 large cubed potato
2 cups coconut milk
1/2 cup sliced carrots

Stove Top Directions:

  • Saute onion and carrots in oil with Thai spice. 
  • Add diced chicken and saute until brown. 
  • Stir in potato and coconut milk. 
  • Bring to a boil and simmer until cooked. Stir occasionally.
  • Serve with rice

Slow Cooker Directions:
Add all ingredients into the slow cooker. Do not dice or cut up the chicken breast. Stir so everything is coated.
Cook on low for 8 hours or high for 6. The chicken will have a pulled instead of chunky.

Sauerbraten (German Pot Roast)

The husband travels to Germany on occasion and was craving some German Pot Roast also known as Sauerbraten! I looked at many different recipes and decide that Alton Brown wouldn't send me in the wrong direction.

I confess that I did make changes to the original recipe. I omitted the Juniper Berries as those were not available at Wegmans. I did not sear the meat prior to marinating. I also used the slow cooker on low for about 12 hours instead of cooking in the oven.

Many of the reviews said that there were too many gingersnaps and to use 1/2 the amount of sugar. I followed those tips however I think it needed the full amount of both (18 cookies instead of 10 and 1/3 cup of sugar instead of 1/4). The broth/liquid wasn't thick enough and it was very acidic/tangy. I did throw in 2 potatoes that were wilting on my counter tops as well.

I would also vent the slow cooker lid to reduce the liquid and help make it less soupy.

The slow cooker the meat became more pot-roast like instead of slice-able. Tender and yummy, just not what (I believe) it should have resembled.

This was served over fresh and homemade spaetzle!

Sauerbraten
Adapted from Alton Brown
Serves 2 1/2 very hungry adults

2 cups water
1 cup cider vinegar
1 cup red wine vinegar
1 medium onion, chopped
1 large carrot, chopped
1 tablespoon plus 1 teaspoon kosher salt, additional for seasoning meat
1/2 teaspoon freshly ground black pepper
2 bay leaves
6 whole cloves (1/4 to 1/2 tsp ground cloves)
12 juniper berries (optional)
1 teaspoon mustard seeds
1 (3 1/2 to 4-pound) bottom round (I used Chuck Roast)
1 tablespoon vegetable oil
1/4 cup sugar
18 dark old-fashioned gingersnaps (about 5 ounces), crushed
1/2 cup seedless raisins, optional

In a large saucepan over high heat combine the water, cider vinegar, red wine vinegar, onion, carrot, salt, pepper, bay leaves, cloves, and mustard seeds. Cover and bring this to a boil, then lower the heat and simmer for 10 minutes. Set aside to cool.

Pat the bottom round dry and rub with vegetable oil and salt on all sides.

When the marinade has cooled to a point where you can stick your finger in it and not be burned, place the meat in a non-reactive vessel and pour over the marinade. Place into the refrigerator for 3 days. If the meat is not completely submerged in the liquid, turn it over once a day.

After 3 days of marinating, preheat the oven to 325 degrees F.

Add the sugar to the meat and marinade, cover and place on the middle rack of the oven and cook until tender, approximately 4 hours.

Remove the meat from the vessel and keep warm. Strain the liquid to remove the solids. Return the liquid to the pan and place over medium-high heat. Whisk in the gingersnaps and cook until thickened, stirring occasionally. Strain the sauce through a fine mesh sieve to remove any lumps. Add the raisins if desired. Slice the meat and serve with the sauce.

Turkey Meatloaf

I'm not crazy about meatloaf but my family loved this! I actually made it ahead of time and froze it wrapped up in tinfoil. I let it defrost in the fridge over night and then baked it for almost 2 hours.

When making the loaf shape lean towards flattening so that it will cook evenly. No pictures this round! We ate it too quickly :)

If you are freezing the meatloaf I'd suggest the ketchup topping after the loaf has defrosted.

Turkey Meatloaf
Adapted from Ina Garten
Serves 8-10

3 cups chopped yellow onions (2 large onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves (1/2 teaspoon dried) or oregano
1/3 cup Worcestershire sauce
3/4 cup chicken broth
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast (Optional: use a combination of turkey sausage and turkey breast)
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup

Preheat oven to 325 degrees F.

In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.

Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

Rice Pilaf

I grew up eating the boxed rice pilaf and I had a craving for it the other day. The boxed stuff has a lot of sodium so I was curious about making it at home from scratch. This was so easy and I don't know why people use the boxed mix.

I will give you a warning...red onion turns green so you should use the white onion.

Rice Pilaf
Adapted from All Recipes 
Serves 4

2 tablespoons butter
1/2 cup orzo pasta
1/2 cup diced white onion
2 cloves garlic, minced
1/2 cup uncooked white rice
2 cups chicken broth or veg broth
1/2 cup slivered almonds (optional)

Melt the butter in a lidded pot over medium-low heat. Stir in almond and orzo pasta until golden brown. Add onion and cook until onion becomes translucent, then add garlic and cook for 1 minute. Mix in the rice and chicken broth. Increase heat to high and bring to a boil. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Remove from heat and let stand for 5 minutes, then fluff with a fork.

Broccoli Slaw

This is the broccoli slaw recipe from Smitten Kitchen. I loved this! It was refreshing and surprisingly light. 
I did use real buttermilk instead of my usual substitute (milk + white vinegar) because I wasn't sure of the flavor impact.

Next time I would add some dice chicken, or red cabbage or maybe sprinkle some crispy bacon pieces on top because...why not?! If I added more I would make more dressing too.

Broccoli Slaw
makes about 9 cups

2 heads of broccoli (florets and stems)
1/2 cup thinly sliced almonds or walnuts
1/3 - 1/2 cup dried cranberries or raisins
1/2 small red onion, finely chopped (about 1/4 cup)

Buttermilk Dressing:
1/2 cup buttermilk, well-shaken
1/3 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon sugar
Salt & Pepper

Trim broccoli and cut into bite sized pieces using a knife, food processor, or mandolin slicer.

Toss the sliced broccoli with the almonds or walnuts, cranberries or raisins, and red onion in a large bowl (I used my largest cooking pot). 

In a small bowl, whisk all the dressing ingredients together. Pour the dressing over the broccoli and toss it well. Season with additional salt and pepper if you'd like.

Store in the fridge until ready to serve for up to a week.

Pasta Sauce: Tomato + Onion + Butter

I started to eat then realized...wait! Picture! :)
I read about this pasta sauce recipe on Smitten Kitchen and since I have an onion lazing about on the counter... I decided this would be perfect for lunch!

I cracked open 2 cans of tomato sauce, chopped the onion in half, cut a hunk of butter and plopped it all into my pot. Let it simmer for 45 minutes and volia! Time to eat!

I will say that I was skeptical to make pasta sauce without any Italian seasoning or garlic...but I gave it ago! Next time I would add it just for the taste test opportunity.

This sauce was very very rich and very very good. I was very surprised at how much onion flavor came through and now I will never feel the need to chop up an onion for pasta sauce again!

Now what to do with the soft, sweetened, tomato sauce coated onion? I tried a nibble of the onion and it was quite tasty. One of the suggestions was to eat the onions on some warm bread.

Pasta Sauce: Tomatoes, Onion, and Butter
serves 3

2 cans tomato sauce (or diced tomatoes or whole peeled tomatoes, plus juice)
5 tablespoons butter (salted or unsalted)
1 medium-sized yellow onion, peeled and halved
Salt to taste

Put the tomatoes, onion and butter in a heavy saucepan over medium heat.
Bring the sauce to a simmer then lower the heat to keep the sauce at a slow, steady simmer for about 45 minutes.
Stir occasionally, crushing the tomatoes against the side of the pot with a wooden spoon.
Remove from heat and take out the onion.
Add salt to taste and keep warm while you prepare your pasta.

Beef Stew

Here is a yummy (and easy) slow cooker beef stew recipe! I found the recipe off All Recipes. I selected it based off the over 2000 reviews. Because this was a meal that included kids (and they will refuse to eat a meal based on seeing certain ingredients) I blitzed the onions and celery in the food processor so that there were no visuals. Keep the potatoes and the carrots in the larger chunk sizes so that way they aren't mush after cooking for so long.

I prepped and assembled the meal the night before and kept it in the fridge. I woke up on Saturday morning, plugged in the slow cooker, then we ran our errands and attended our sporting events. We came back to a delish and warm stew!

I also made a loaf this dutch oven bread.

Slow Cooker Beef Stew
Serves 6-8

3 - 4 pounds beef stew meat, cut into 1 inch cubes
3/4 cup all-purpose flour
1/2 tsp salt
1/2 tsp ground black pepper
1 1/2 tsp oregano
1 heaping tsp paprika
1 heaping tsp garlic powder
2 bay leaf
2 tsp Worcestershire sauce
1 tsp of gravy master
1 onion, chopped
2 stalks celery, sliced
4 potatoes, large dice
4 carrots, sliced thick
2 cups beef broth
12 oz frozen peas

Put all the ingredients (minus broth and peas) in the slow cooker and stir together so everything is coated. Then add the beef broth and give another stir. Everything will be a soupy mess.
Cover and cook on low for 10-12 hours or on high for 4-6 hours.
About 20 minutes before serving add the bag of frozen peas.

Chicken Rice Soup

While it is almost 90F… fall is coming! I swear it! So here is a quick and easy chicken soup recipe that you can quickly assemble for those cool evenings. The roux will create a creamer thicker broth for the soup.

If you are cooking for picky kids puree the onion, garlic, and celery in the food processor. You’ll get the flavor but none of the texture. Rice can be substituted for pasta. Left over chicken would work too. And any veggies that may be having a slow death in your crisper drawer could be included in this as well! Flavors that would be tasty would include a few slices of ginger in the broth while cooking (remove before serving) or lemon juice in the broth.

This soup freezes well, just omit the rice/pasta. When you are ready to eat make the pasta/rice when the soup is heating up and then combine. This prevents the rice/pasta from being gummy and mushy.

Chicken Rice Soup
Makes 4-6 servings

2 tbsp oil
Small Onion, diced
3 garlic cloves, minced
3 carrots, sliced
3 stalks of celery, sliced
4 tbsp flour
2 tbsp butter
1 tbsp seasoning (oregano, Italian seasoning, or parsley)
1 can of corn (optional)
4-5 cans of chicken broth (it seems like a lot of broth but it will absorb and thicken as then soup sits in the fridge)
3 chicken breasts (cooked)
1 cup brown rice (uncooked)
Salt and pepper

To Cook Chicken:
Preheat oven to 350F. Season chicken with salt and pepper. Cook for about 30 minutes. When it is done take it out and let it cool. Shred and put aside.

To Cook Rice:
1 cup rice in 1 ½ cups of liquid (I do a split between water and chicken both). Bring to a boil then reduce to a simmer. When liquid is mostly absorbed (after approx. 25 minutes) turn off the heat and put aside.

To Make Soup:
While the chicken and rice are cooking, start making the soup! Heat large pot. Add a little oil and add in the garlic, onion, carrots, and celery. Season with salt and pepper. Let it sauté 5 minutes. Add butter and stir into the veggies. When melted add in the flour. Stir to coat the veggies. Add in seasoning of your choice. Season with salt and pepper. Add ½ can of broth and stir so the broth doesn’t become lumpy. When broth is smooth add in rest of the broth. Add chicken and rice when they are done cooking.

Sweet Potato Bean Burger

Sweet potato bean burger, this was so yummy and very filling! This recipe was adapted from Peas and Crayons. Also check out these Thai Sweet Potato Burgers!

The burgers can be frozen (after baking and cooling). To reheat bake for 20 minutes at 400F. Just keep an eye on the burger so they don't get too dried out.

Sweet Potato Bean Burger
makes 8 patties

1 large sweet potato, cooked
1 [15oz] can of chickpeas or equivalent
1  [15oz] can of cannellini beans or kidney beans
1/2-1 cup of diced bell pepper
1 medium-large jalapeno, diced
1 cup red onion, diced
1 cup white onion, finely diced
3 cloves of fresh garlic, minced
2 eggs
1 ½ -2 cups of rolled oats
2 tbsp oil
1 1/2 tsp cumin
1 tsp each oregano and basil
1 tsp garlic powder
1/2 tsp crushed red pepper flakes
1/2 tsp cayenne pepper
1/2 tsp salt and pepper

Cook sweet potato: Slice off ends of potatoes, stab with a fork a few times. Bake at 350F for 1 hour. Once soft take the peel off and slice into chunks. Puree it up in the food processor. Add in kidney beans and chickpeas and pulse a few times (I like it a little chunky). Put into a big bowl.

While the sweet potato is baking, saute the onions, bell pepper, and jalapenos in approx 2-4 tablespoons of oil with black pepper and a sprinkle or two of red pepper. After about 7 minutes or so, add garlic and continue to saute until the veggies are translucent and tender. 

Once your veggies are ready, transfer to a large bowl with the beans, sweet potato, and raw oats, and then add your herbs/spices to season.  Adjust spices as needed. I found it easier to stir this mix in the kitchen aid with the paddle attachment, but a spoon also works.

Shape the mixture into 8 patties, packing each patty tightly between your hands so it holds together well. Place each patty onto the prepared baking sheet.


Bake for 20 minutes, then gently flip the patties and bake for another 15-17 minutes until golden on both sides.

Savory Roasted Vegetables

Tis the season of summer bounty! Yay fresh veggies!! This will take about an hour to prepare and cook. The most time consuming part of this recipe is chopping up all of the vegetables.

Roasting veggies can be done in big batches with little effort and can be stored for a week. They can be served hot or cold, as a side dish or part of the main meal. I have served the veggies over rice or in a homemade tortilla flat bread. But also in a sandwich with hummus, on a pizza or in a quesadilla!

You can use whatever veggies looked good at the market, were on sale, or you had extra laying around! I used oregano because I like that herb, but you could also use parsley, thyme, basil, etc.  Also, the amount of oil will change based upon how many veggies you are cooking and need to cover.

PS Someday I will invest in a better camera beside my phone and I will work on my presentation skills! I swear this was tasty and I will be making it again!




Roasted Veggies
Serves 3 (as a main dish)
 
1 zucchini, circle slices
1 med eggplant, sliced into sticks, salted and let sit in a strainer for 30 minutes, rinsed
~1/2 cup Carrots, sliced into sticks
1/2 red pepper, sliced
1/2 orange pepper, sliced
~1 cups chopped broccoli, large chopped
1/4 lg onion, large dice or sliced

1/4-1/2 cup Olive Oil
Salt & Pepper
1/4 tsp Oregano (optional)
1/4 tsp Red pepper flakes (optional)

Combine olive oil, salt & pepper to taste, oregano, red pepper flakes (optional).

Toss veggies in olive oil. Spread onto a cookie sheet in one layer.  Use more than one sheet if necessary. Roast in oven at 425F for 20-35 minutes. They should start to get a little crispy but not burning.

If you want the veggies to be softer and are at the amount of "crisp" that you want, continue to cook at 350F.

Spicy Cashew Stir Fry (Chicken, Tofu, or Tempeh)

Basic stir fry and not as spicy as I had hoped. Stir fry is a great way to use up lots of left over ingredients and will also cook really fast.

Next time I would include extra spice such as a Thai chili pepper. I also marinated tempeh in soy sauce while I was chopping the veggies. I put the Tempeh in the frying pan with the last 5-10 minutes to heat up and cook through. Firm tofu would have also been a good substitute as well.

Salsa Poached Chicken

I was looking for a new chicken dish to go along with the leftover rice, limes, cilantro, etc. I was inspired by the Salsa Poached Chicken recipe from here.

This took about 15 minutes to cook as I had sliced the meat up prior to poaching. I think next time I would use a similar technique... but saute the chicken in the pan with the salsa to see if it still brings all the taste with even less time. But poaching it in the salsa had great flavor for such a short cooking time.

I did add in some lime to the salsa while cooking the chicken to try and help tie the meal together.

I served the chicken with cilantro lime rice, homemade yogurt, and fresh tortillas.

Salsa Poached Chicken
Serves 4-6

4 boneless skinless chicken breasts, sliced
1 cup salsa
1/4 cup chopped onion
Water
Add chopped onions to a pot with a lid with about 1 tbl olive oil until slightly opaque. Add the salsa, chicken breasts, and water to cover the chicken, place lid on pot.  Reduce heat to low and simmer for about 30 min or until chicken is cooked.

Remove chicken from pot and set on a cutting board until cool enough to handle. With two forks, shred the chicken breast and place shredded chicken breast into the pot with the fresh salsa mixture.

Spicy Cilantro and Lime Chicken

Lots of limes and cilantro to get through before they go bad! Here was a very spicy chicken dish served over white rice.

I added in a Thai chili pepper, which added too much heat for me! So I omitted it from the recipe below.

No veg was served that night, but a side of roasted asparagus would have been great!

Spicy Cilantro and Lime Chicken  
Serves 2-4

¾ tsp salt
¼ tsp black pepper
½ tsp cayenne pepper
¼ tsp paprika
½ tsp garlic powder
¼ tsp onion powder
¼ tsp dried thyme      
¼ tsp dried parsley
4 boneless, skinless chicken breast (butterflied and cut half)
1 tbsp olive oil 
¼ c diced onion
5 cloves garlic, minced
½ lime juice
¼  c fresh cilantro, chopped
½ tbsp butter

In a small bowl, mix together all the spices listed above, everything from the salt to the parsley. Sprinkle spice mixture generously on both sides of chicken breasts. If the breasts are thick, butterfly them or pound them thinner.

Heat large frying pan with some oil over medium heat. Sauté onion, garlic, and pepper with the lime juice until onion is translucent. Add chicken and cilantro, put a few bits of the butter around the chicken as it cooks. Let it cook until golden brown, about 6 minutes on each side, depending on thickness.

Occasionally squeeze the rest of the lime over the chicken while it is cooking. I check the chicken by slicing the chicken in the thickest part of the breast make sure it is cooked through.
