The outside is a crispy cookie/carmel/buttery cookie and the inside is sweet and soft.

Vanilla Wafers
makes about 100 1 inch cookies
Ingredients
1 stick unsalted butter, softened
¼ teaspoon salt
1 cup sugar
1 large egg white
1 ½ teaspoons vanilla extract
1 tablespoon milk
1 1/3 cups AP flour
3/4 teaspoon baking powder
Cream butter, salt, sugar and vanilla. Beat in egg and milk
until well incorporated.
Whisk together flour and baking powder and add to butter
mixture. Mix until just combined.
Use a cookie scoop to create the same sized cookies. This
made 3 cookie sheets of cookies, they spread a little but not too much so you
can put many cookies (I did 5 x 6 cookies per sheet).
Bake at 350°F for about 15-20 minutes, until cookies are
lightly browned. Cool completely before storing.
