Egg Salad
8 hard boiled eggs, chopped (I take out a few of the yolks because I don't care for the taste)
1/4 cup mayonnaise
1 tsp Dijon mustard
1/4 cup chopped green onions
salt and pepper to taste
1/4 tsp paprika
- Combine eggs in a bowl with the mayonnaise, mustard, and green onions.
- Season with salt, pepper and paprika.
- Stir and serve on your favorite bread or crackers.
