Spinach and Bacon Quiche

Um, this was incredible and totally was perfect for brunch! It has protein right?! I swapped out the heavy cream for half and half, used 1/3 pound of bacon, omitted the extra salt, and only used a small sprinkle of cheese. I adjusted the amounts and it will JUST fit into the 9 inch pie plate. If you are going to add more cheese I would reduce the bacon and use 5 eggs.

This is easy enough to make the morning of your brunch within an hour (about 15 minutes of prep work) - but make the bacon the night before!

I baked the bacon at 350F for 15 minutes on a foil lined cookie tray.

Spinach and Bacon Quiche

serves 8

6 large eggs
1 1/4 cups half and half
Pepper
2 cup chopped fresh baby spinach, packed
1/3 pound bacon, cooked well done and crumbled
A sprinkle of cheese (cheddar, Swiss, or mozzarella)
3 scallions, chopped
1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate

Preheat the oven to 375 degrees F.
Bake pie crust in 9 inch pie plate for 10 minutes.

Meanwhile...
Microwave spinach for 2-3 minutes, then chop. Squeeze spinach in a couple paper towels or a cheese cloth to remove most of the water.
Whisk the eggs, cream, and pepper in a large bowl - really really well!

On the hot pie crust add a sprinkle of cheese (this helps keep the crust from getting soggy), then add the spinach, scallions, and the crumbled bacon.
Pour the egg mixture on top. 
Bake for 35 to 45 minutes until the egg mixture is mostly set with a slight jiggle. 
Cut into 8 wedges.

Stacked Roasted Vegetable Enchiladas

This was incredible!! It did take a bit longer then expected because roasting the veggies takes a while. But this would be awesome for veggies that are starting to turn or if you were hanging out one day with a bit of the extra time. I would probably roast the veggies one day and then assemble/cook the next day.

Picture didn't come out so well because I didn't wait for it to slightly cool before cutting :)

Stacked Roasted Vegetable Enchiladas
Adapted from Two Peas and Their Pod
Serves 5-6

Ingredients:
1 large red pepper, chopped, seeds removed
1 medium zucchini, chopped
1 medium yellow squash, chopped
1 large onion, chopped
1 cup corn
1 tablespoon olive oil
Salt and pepper
1 can black beans, rinsed and drained
1 teaspoon ground cumin
1 teaspoon chili powder
2 garlic cloves, minced
1 jalapeño, minced (optional)
1/2 cup chopped fresh cilantro
Salt and pepper, to taste
2 cups red enchilada sauce (canned el paso)
9-10 small corn tortillas
2 cups shredded Monterey Jack cheese (Mexican cheese)

Directions:
1. Preheat the oven to 400 degrees F. Place red pepper, zucchini, yellow squash, and onion on a large baking sheet. Drizzle with olive oil and toss until vegetables are coated. Season with salt and pepper. Roast vegetables for 30-40 minutes, or until tender, stirring occasionally. Remove vegetables from oven and let cool to room temperature. Reduce oven temperature to 350 degrees F.

2. Grease an 8x8 square baking pan and set aside. In a medium bowl, combine roasted vegetables, black beans, cumin, chili powder, garlic, jalapeño, and cilantro. Stir and season with salt and pepper.

3. Spread 1/4 cup of enchilada sauce into the bottom of the baking pan. Add a layer of tortillas, to completely cover the bottom of the pan. You might have to cut the tortillas to make them fit. Top with 1/3 of the vegetable/bean mixture and 1/3 of the cheese. Make a second layer of tortilla, enchilada sauce, vegetables/beans, and cheese. Top with with a layer of tortillas, enchilada sauce, vegetables/beans, and cheese. Spray a sheet of aluminum foil with cooking spray and cover the pan.

4. Bake enchiladas for 20 minutes. Remove the foil and bake for another 10 minutes, or until cheese is melted and the enchiladas are bubbling. Remove enchiladas from the oven and let cool for 10 minutes. Cut into squares and serve warm.

Copy Cat Chex Mix

I love salty savory snacks and chex mix always hits the spot!! But... I don't want all the funky ingredients and lets be real, I pick around the stuff I want to eat. So here is a recipe that you can make with ONLY the tasty bits you want to eat! 

To sum it up, 16(ish) cups of stuff (cereals, pretzels, chips, cheerios, cheese its, bagel crisps, nuts, etc) and then coat it all in the seasoned butter mixture. Bake for 1 hour and stir every 15 minutes!

The only changes I'd make next time? I'd add a little more seasoning and make sure you mix it all up well so the things are coated nicely!! I've updated the amounts below! Enjoy!!

Copy Cat Chex Mix

5 cups corn chex
4 cups wheat chex
2 cups pretzels
1 cup honey-nut cheerios
2 cups cheese its
1 cup almonds
1 1/2 cups peanuts

¾ cup butter, melted
5 tablespoons Worcestershire sauce
1 1/2 tablespoon seasoned salt
2 teaspoons garlic powder
2 teaspoon onion powder
1/4 - 1/2 teaspoon cayenne pepper (optional, a little goes a long way!)

1. Preheat oven  275F
2. In a large roasting pan, stir together the cereals, pretzels and nuts.
3. In a small bowl, whisk together the melted butter, Worcestershire sauce, seasoned salt, garlic powder, onion powder and cayenne pepper. Drizzle evenly over the cereal mixture and, using clean hands, toss to combine, making sure that the mixture is evenly moistened.
4. Bake for 1 hour, stirring every 15 minutes. Once cool, store in an airtight container at room temperature for up to 2 weeks.

Meat Lasagna

I found this Lasagna recipe on AllRecipes. I made a couple tweaks but nothing major. I omit the parsley and used oregano instead of basil. I used spicy sausage and ground turkey. I reduced the sugar from 2 tbsp to 1 tbsp and I think the sauce was still very sweet. Next time I will omit the sugar completely and add some red pepper flakes.

Served with my Italian Bread recipe!

Update 9/2015: I've made it again, yummy! I will say it is better if you keep it covered while cooking for almost the entire time as it doesn't dry out as much. Instead of making one large pan I split it into two 9x9 pans and froze the other. To reheat - defrost overnight in the fridge and bake covered for 1-2 hours.



Meat Lasagna
Makes a heaping 9 x 13 baking dish

1 pound Italian sausage (sweet or spicy)
3/4 pound lean ground beef (or ground turkey)
1/2 cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
1 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
1/2 cup water
1 tablespoons white sugar
1 1/2 teaspoons dried basil leaves (or oregano)
1/2 teaspoon fennel seeds
1 teaspoon Italian seasoning
1 tablespoon salt
1/4 teaspoon ground black pepper
4 tablespoons chopped fresh parsley (optional)
1 box lasagna noodles
16 ounces ricotta cheese
1 egg
1/2 teaspoon salt
2 cups grated mozzarella cheese
3/4 cup grated Parmesan cheese

In a large pot, cook sausage, ground beef, onion, and garlic over medium heat until well browned.

Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.

In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.

Preheat oven to 375 degrees F.

To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange noodles over meat sauce. Spread with one third of the ricotta cheese mixture. Top with handful of the mozzarella. Spoon 1 1/2 cups meat sauce over mozzarella and repeat the layers.

Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.

Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

Crispy Baked Zucchini Fries

Here was some tender and savory baked zucchini fries. The recipe comes from The Lean Green Bean and Chocolate Covered Katie.

I used the same process and dredge for chicken strips too. I did the chicken after the zucchini to prevent any contamination of the ingredients too.

Crispy Baked Zucchini Fries
2-3 small zucchini, sliced into fry shapes
¼ cup flour
¼ tsp salt
¼ tsp garlic powder
¼ tsp paprika
1 egg
1 cup breadcrumbs
1/2 cup Parmesan cheese

Preheat oven to 450F.
In one bowl combine flour, salt, garlic powder, and paprika. In another bowl scramble an egg in a separate bowl. In a third bowl pour breadcrumbs and Parmesan cheese.
Dip each zucchini stick in the flour, then the egg, then the breadcrumbs.
Place on a cooling rack or silpat mat on a cookie sheet. Bake 18-19 minutes. Check at 10 minutes to see if you need to flip them.

Spinach and Ricotta Manicotti

We just bought a basil plant, so we have to make some fresh Italian food! Manicotti was on the list, it is a bit of a pain but makes for a special meal. I'm OK with making lasagne instead for a faster meal.






Spinach Ricotta Manicotti
Makes 10

15 oz ricotta cheese
1 bag baby spinach
1 bag Italian mix cheese
5 cloves Garlic, minced
1 Egg
Basil
Salt and Pepper
Jar of sauce
1 box of Manicotti pasta shells

Combine everything except for the sauce and the shells. I put the filling into a zip top bag and then sliced off a corner to pipe the shells.
Layer sauce in the bottom of pan. Fill each shell and place into the pan. Cover with remaining sauce and some cheese.
Bake at 350F for 30-45 minutes. Serve hot!

Cheesy Tomato Sauce

You know when you the cooking gods are smiling and you make something really really tasty? Well this pasta sauce was created on one of those lucky cooking days. It is a simple semi-homemade sauce recipe for when you need to make dinner with limited ingredients!

Cheesy Tomato Sauce
makes 4-8 servings

1 lb ground turkey
1 onion, diced
2 big cloves of garlic, minced
1 Thai chili pepper, small mince
3 shakes of Worcestershire sauce
2 tbsp dried or freshly chopped basil, oregano
1 jar of pasta sauce (I used tomato basil)/Canned no flavor tomato sauce
1 cup shredded mozzarella cheese

Heat oil in large frying pan. Saute onion, garlic, and pepper together. Once starting to soften add the meat. Season with the worcestershire sauce, salt and pepper. Cook meat until done. Add spices and tomato sauce and let it simmer until you are ready to eat. If you want to make it cheesy, stir in the mozzarella until it is combined and melted. Let it simmer for another 10 (ish) minutes then serve over pasta!

Chicken Fajita Stir Fry

This was a meal that was comprised of many leftovers plus some Trader Joe's taco seasoning. I was inspired by some left over peppers and chicken to make some sort of fajitas.

This was a fast meal to put together especially since the smaller the vegetables and chicken are sliced the faster the meal will cook up.



 

Chicken Fajita Stir Fry
makes 5 servings

1/2 Onion, diced
5 cloves Garlic, crushed in garlic press
1 sliced bell pepper (half red, half orange)
Chicken, approx 2 lbs, bite sized pieces/strips/etc
Handful of sliced baby carrots
Bottom inch of a bag of frozen corn
1/2 bag of baby Spinach

Tortillas/White Rice
The bottom 2 bags of Cheese
1 single serving packet of Guacamole

Salsa, to top the chicken mixture
Trader Joe's Taco Seasoning Packet

Heat large frying pan with some oil.
Saute onion and bell pepper about 2 minutes. Add chicken and the carrots.  Sprinkle with about 1/2 of taco seasoning packet.
When chicken is cooked through add in frozen corn and spinach. Once spinach is just about wilted take off the heat. Taste and add more of the seasoning packet until desired spiciness is reached.
To assemble take tortilla and add a dollop of guacamole, then put a scoop of the chicken mix on top. Add cheese and salsa on top. This mix is also good served on jasmine rice.

Tacos

Who doesn't love tacos? This recipe combines some spicy refried beans with the ground turkey. Tacos are a great really fast dinner to make, probably under 20 minutes. 

Sometimes I will make my own taco seasoning because it is fairly straight forward, but this time I used the Trader Joe's taco seasoning which has quite some kick to it! I used the Trader Joe's flour tortillas which once heated up for about 15-20 seconds in the microwave are quite easy to fold. We tried the Brown Rice tortillas and those don't fold very well for burritos or wrapping the tacos. They would be good for quesadilla though!

This heated up well as leftovers for lunch the next day too. 


Tacos
4 servings

1 package flour/rice/corn tortillas
1 lb Ground Turkey
Seasoning packet - Trader Joe's Taco Seasoning
1 can refried beans (see recipe below)
1 head lettuce
1 small can black olives
Salsa
Cheese
Guacamole
Sour Cream
etc

Heat skillet. Add ground turkey, cook until all the meat is browned. Add refried beans and taco seasoning packet (to taste). If it is too thick add in water, about 1/4 cup at a time. Slice up the lettuce and put the olives, salsa, and cheese into respective bowls. Assemble by taking tortilla or taco shell,  add meat and then your toppings!

Semi-Homemade Refried Beans 
Adapted from PinchMySalt 
 
1 Tbsp bacon drippings (or vegetable oil)
2 cloves of garlic, minced or 1 tsp garlic powder
Sprinkle some taco seasoning into the beans, or a tsp of chili powder
1 cans (15 oz) pinto beans

In a large skillet, heat bacon drippings over medium heat. Add the garlic and cook, stirring constantly, for a minute or two. Add the drained beans smash them with the back of a wooden spoon. Keep stirring and mashing until the beans are the consistency of soft mashed potatoes. Taste and season with salt if needed.

The Easiest Guacamole

I made nachos with my Guac!
Seriously. The. Easiest. Guacamole. This is great for when you are looking for a quick snack to assemble and don't want to buy or find lots of ingredients.



Avocados are ripe when the skin is
starting darken and when you gently
squeeze it it is soft (similar to a peach!).

Cut in half, remove the pit

Slide a spoon around the edge to separate out of the skin

































 


Put the avocado insides into a bowl and then mash it up with a fork.

Add in salsa (little less than 1/4 cup) and continue to mash/mix until combined.

And you are done!! This might not be the prettiest as the salsa juice makes it a little muddy since I didn't/don't bother to strain it. However, get some good quality salsa because that adds the spices and the onion and tomatoes and everything else!

I like the Trader Joe's salsa since it has quite a kick to it.

Dad's Pulled Pork


My dad makes a great slow cooker pulled pork so I decided to give it a shot! This is a spicy and sweet BBQ sauce pulled pork.

I did a half batch, 2.5 lbs of boneless roast pork. You can use pork shoulder too.

Combine everything into the crock pot. 8-9 hours on low, 4-5 hours on high. I did about 6-7 hours of some variation of low and high.
Spices

Cover the pork with the soupy mixture
Pork is tender and starting to break apart when you jab it with a fork

Take it out and use forks to pull it apart/shred it
Put it back into the broth
Garlic butter grilled Kaiser rolls!
I melted a pat of butter with a little less than a 1/4 tsp of garlic powder in a frying pan. Raise the heat to about 7 and then put the buns in the pan for about 3-4 minutes, until they are golden and crunchy.

Look at that!!!
Normally we serve it burrito style on a tortilla with white rice and Mexican style shredded cheese and then grilled. And this is wonderful. However, when N. and I went to lunch at Woodstock Inn in Woodstock NH, we had pulled pork served on garlic butter grilled rolls.

So, for burritos I would keep the beans and corn. If I want to serve it on rolls, I would omit the beans and corn.

UPDATE 3/9/13: Used boneless pork loin pieces, very tender.

Dad's Pulled Pork
makes enough for 8-10 sandwiches

½ cup brown sugar
2 tbsp Red pepper flakes
1 tbsp Cayenne
1 tbsp Black pepper
12 oz Coke
1 cup BBQ sauce
1 cup ketchup
4 ½ lbs roast pork, pork shoulder...
28 oz of black beans (drained)
1 can corn (drained)
Combine all ingredients and marinate overnight in the fridge.
10 h on low
Pull it apart
Put it back in and make make sandwiches or burritos!

Godmother's Mac & Cheese Casserole (Plus Chicken & Broccoli)

N and I were looking to make something for dinner and we decided to make a mac & cheese casserole. Now, who makes the best mac & cheese casserole? My godmother. It is cheesy, creamy, and topped with buttery Ritz crackers.

The recipe actually comes from the back of the Prince elbows pasta box, however there is a secret ingredient! A tsp of ground mustard. Where did this addition come from? I have no idea. But this is a very easy dish that is great to bring to big family parties.

I doubled some of the recipe (typical me, I only had enough to double some of the ingredients). You can also find it on this blog as well.

I wanted to make this more filling so I added 2 chicken breast and a crown of broccoli.

I started with the cheese sauce. I combined 2 tbsp of melted butter with 1/4 c of flour, 1 tsp of onion powder, 1 tsp ground mustard, and salt & pepper. I let this all combine. Now I get creative. I added the (mostly defrosted) chicken and let that cook a little bit. Then I tossed in the chopped up broccoli. I didn't have enough milk, I used 2 cups of 1% milk. I also used 2 cups of shredded cheddar cheese. The recipe called for double that. However I didn't let that phase me and continued to stir until the cheese melted into a thick sauce. It looks like broccoli and cheddar soup!
 
I cooked the pasta according to the directions on the box. Elbow pasta was not on sale so I purchased rigatoni for $0.88 instead of elbows for $1.29.

I drained the pasta and put it back in the pot. I poured the cheese sauce over the pasta and stirred. I dumped the entire pot into my casserole dish and covered with another cup of mozzarella cheese.

Next is the cracker topping. I used my food processor to crush 15 Ritz crackers and combine it with a tbsp of melted butter.
 Baked it for 25 minutes at 350F.
Next time I would use the correct amount of cheese which is 4 cups. But everything cooked perfectly and made about 4-6 servings!

Godmother's Mac & Cheese
4-6 servings

1 box of pasta (16 oz)
2 tbsp butter
1/2 cup of flour
1 tsp onion powder
1 tsp ground mustard
salt & pepper
1 crown of broccoli
1 lb of chicken - 2 chicken breast, diced
4 cups of cheese
3 cups of milk

15 Ritz crackers, crushed
1 tbsp butter, melter

  1. Preheat oven to 350 degrees F.
  2. Cook pasta according to directions. Drain.
  3. Meanwhile, in a pot, melt butter, add flour, onion powder, ground mustard, salt, and pepper. Add chicken and broccoli (if using). Let good for a few minutes. Add milk and cheese. Stir until melted. 
  4. Combine pasta and sauce. Pour into 9x13 baking dish.
  5. Combine crushed crackers and butter. Sprinkle over the pasta mixture.
  6. Bake for 20-30 minutes until golden and bubble.
